Instructions

  1. In a bowl, combine all ingredients for the sauce, and then set aside.

  2. Heat a wok over high heat, add 1 tablespoon of oil, and cook the shrimp. 

  3. Season with a pinch of salt and pepper and cook your protein as preferred. Remove from the wok and set aside. 

  4. In the same wok, add remaining oil, chopped garlic and shallot. Stir fry for 30 seconds or until slightly brown but be careful not to burn it.

  5. Add the carrots and green leaf vegetables, then stir fry until vegetables are softened (about 1-2 mins). 

  6. Stir in prepared egg noodles and pour the sauce. Toss and stir until everything is combined (about 2-3 minutes), and keep cooking until you cannot see any liquid in the wok.

  7. Stir in bean sprouts and cooked protein, stir until combined. Sprinkle fried shallot and mix in. Remove from heat.

  8. Transfer to a serving plate and sprinkle with more fried shallot. 

  9. Optional – fry an egg as preferred and add to the top of the dish

    Optional – garnish with chillies or green spring onion
