  1. Sautee the onion and celery until translucent

  2. Add the turmeric, chili and garlic until lightly browned

  1. Stir through 1 can of tomatoes plus one can of water

  2. Add the sweet potato, potato, salt and pepper and simmer

  3. Add the cannellini beans, including the liquid, and a handful of parsley

  4. Use the second can of tomatoes or add more liquid if it needs, pour in the split red lentils, cook for at least 10 mins

  5. Add the green beans, another handful of parsley, zucchini, simmer on low heat for 10-20 mins, or until done

  6. Stir through spinach at the end

  7. Serve with cooked brown rice, parsley and a drizzle of olive oil
